Strawberry Ice

This recipe tastes similar to ice cream.  It tastes as though it is very creamy, but at the same time, it is light and very low in fat.

Ingredients:

1 egg white

1/2 cup icing sugar (you can substitute powdered fructose if needed)

1 punnet (approximately 250 grams) strawberries

 

Method:

1.  Blend the strawberries until they’re very smooth.

 

2.  Place egg white in bowl of mixmaster and beat lightly – just for a second or two.  Add the icing sugar and the strawberry puree.

 

3  Beat all this in the mixmaster until it grows enormous and light and pale pink.  That’s all that you have to do!

 

In my large mixmaster (pictured – a Kenwood Major) bowl it almost comes to the top, so keep beating until you’re sure you can’t get it any lighter.

When it’s done, it will be quite stiff.

 

Remove beater.

Scrape into a large container for freezing.  Once its frozen you can eat it.  There is no need to get it out and beat it at all.
