Caramel Self-Saucing Pudding

 

½ cup oil
½ cup brown sugar
1 egg
½ cup milk
¾ cup self raising flour
¾ cup brown sugar extra, firmly packed
1 ½ cups boiling water

 

Grease medium size pudding/casserole dish; preheat oven to 180°C.

Put into bowl oil, sugar, egg, milk.  Whisk to combine.

Add flour.  Whisk again.  There is no need to mix a lot - just make a smooth batter.

Spread into bottom of dish.

Sprinkle over extra brown sugar.

Gently pour boiling water on top.

Bake about 35 minutes.

 

Sit for 5 to 10 minutes before serving, but do serve hot (with cream or ice cream).

 

If you have a very sweet tooth, add a crumbled violet crumble bar into the batter.
