Nut balls
This is one of the dishes that my children are most likely to eat, as well as being super easy. All the ingredients are just whizzed up in the food processor. The longest part is frying the balls, but I do a large batch and freeze them in little dishes just the right size to serve the kids. When I don't feel like cooking, I can have these in front of the kids in 2 minutes from the freezer.
1 cup cooked brown rice
1 cup nuts (pecans are good)
1 onion, roughly chopped
1 to 2 teaspoons curry powder
1 egg
For coating:
Flour
An egg mixed with a little milk or water
Dry breadcrumbs
· Combine all ingredients in a food processor and blend until fairly smooth and combined.
· Shape into small balls – about the size of walnuts.
· Coat with flour, then egg, then dry breadcrumbs.
· Fry in oil until golden.
Notes and tips:
· These also make good burgers – on a roll or with salad. Add some sauce.
· Make up a large batch and freeze in batches of 8. One batch of 8 takes about 2 minutes on high in the microwave to heat. |
