Stuffed Zucchini Flowers

Wash your baby zucchinis with flowers still attached.

Mix cooked spinach with a little yoghurt cheese.  If you don’t have yoghurt cheese, you can substitute with some feta or feta mixed with cream cheese.

Carefully open each flower and fill with the cheese mix.  Twist the end closed. 

Lay onto a baking tray, and cook at 180 degrees C until browning.

Zucchini flowers are also often stuffed with a rice mixture.
