Dance of the Vegetable Patch

Semi-dried marinated tomatoes

 

1 or 2 punnets of largish cherry tomatoes (or use roma tomatoes)

olive oil

salt and pepper

cloves of garlic

fresh or dried herbs – basil and oregano or your choice

 

·        Preheat oven to 120°C.  Line a tray with baking paper.

·        Halve tomatoes.  Spread them single layer, cut side up, on lined tray.

·        Put into preheated oven and leave until they are as dry as you want them.  This usually takes 3 to 5 hours, depending on the size of the tomatoes.

·        Put into a jar or container and cover with oil, chopped garlic and herbs.

·        Preferably leave overnight before using.
