Other Sandwich Additions

 

Some other deli-style additions to sandwiches or antipasto plates:

 

Sliced, fried eggplant – simply slice and fry in good olive oil

 

Fried asparagus with garlic – fry the asparagus until it starts going limp

 

Marinated yoghurt cheese – drain fresh plain yoghurt by tying it in a piece of muslin over a bowl in the frig for about 3 days, then roll into small balls, roll these in chopped fresh herbs of your choice and store in olive oil with a peeled clove of garlic if you want

 

Hommus – in your food processor combine cooked chickpeas (1 tin or about 1 & ½ cups), 4 cloves crushed garlic, ½ cup tahini and the juice of 1 lemon.  Drizzle in ½ cup olive oil while the motor is running.  Add water until it’s the consistency you want.

 

Olive dip – finely chop a jar of nice, pitted, kalamata olives and mix in just enough fresh mayonnaise to hold the olives together

 

Avocado – either sliced and covered in lemon juice and freshly ground pepper, or mashed and combined with sour cream, lemon juice, garlic and a little chilli to make a guacamole
